How do I create a subcategory in the shop?

I'm trying to create a "subcategory" in an existing category. All the posts have been moved into the subcategory I created! Impossible to go back! I'm tearing my hair out, I can't figure it out. HELP! Thanks for your answers ...

when you’re in the shop category management, you click the small arrow on the right of " edit " and in the drop-down menu, you click on " add subcategories " :
