Good evening, I just bought an item from a seller who listed it for more on another site. On that site, he claims the item is still available even though I paid for it on eBay. Can he cancel the sale when I have proof that it is available? Thank you for your help!

The seller can cancel without having to justify themselves, so there is no point at all in proving anything.
