The buyer pays, and asks for a delivery date well beyond the 3 business days.
I sold an item, and the customer paid for it. Then they ask me to send it 1 week later to the default requested address.
Except that when the customer paid, I have 3 days to ship it, and they therefore won't be able to pick up their package since they won't be available.
What should I do?

Ship at the end of your shipping window: given the carrier's holding period (8 days with Mondial Relay), the buyer will be able to pick up their parcel without any problem when they get back.
Worst case, if they don't, know that they won't be covered by eBay's customer guarantee (uncollected parcel).
