If the seller doesn't manually activate the "payment received" indicator, they can avoid commission fees by making a cancellation for non-payment or by claiming that it's at your request.
If the payment doesn't go through the site, eBay's customer guarantee won't be able to apply (I'm mainly thinking of recourse in the event of non-compliance, since you're talking about handing it over in person).
So it's hard to advise you to settle it on the spot...
