Shipping fee and carrier settings

Good evening,

I'm trying to understand how to set these fees once and for all because I want to always sell the same type of item.
I looked at the online help but no matter what, it gives me fees that I don't understand.

How can I have a single table of fees and countries in which I want to be able to sell, and have the pricing chosen depending on the shipping?

I have the same problem; I only sell vinyl records, mainly 33 or 45 rpm, mainly in France and the USA. See other countries. I don't understand the checkboxes...
